run, sausage, and another night's meal

went for a glorious 30 minute run this evening in the sunshine. can i just say that this winter SUCKED? so thankful for sweet, sweet spring. followed it up with polenta, andouille, red and green peppers, and onions.
but back to the beet pasta i made the other night. i used mario batali's roasted beet past recipe, and was pleasantly surprised when i could actually smell and taste that earthy sweetness of beets in the end result. i used 1/4 of the dough to make dinner for two. after cooking the pasta (which i cut into fettucine), i returned it to the pan and added two large fistfuls of baby arugula (did i mentioned i am SO happy it's spring? the farmer's market is starting to perk up a leeetle) and an orange balsamic dressing with the following breakdown:
2 tbsp balsamic vinegar
1/2 orange, juice and zest
1 tbsp olive oil
2 garlic cloves, finely chopped
1 medium shallot, finely chopped
salt and pepper
squeeze of lemon
let the dressing hang out for a while beforehand. toss the pasta for a minute just until the arugula starts to wilt. top with toasted hazelnuts. delicious.
and for the remaining 3/4 of the pasta recipe? i dried it out on my clothes drying rack and have it stored for future use. mmm...

i used a bit of the dried pasta last night and added peas, a poached egg, some of the leftover hazel nuts, and a drizzling of meyer lemon olive oil. so good!
