Good Run, Good Food

Thoughts:
Tiring run this morning, but I'm glad I did it and that it's out of the way.  I was able to satisfy that mexican food craving last night, and had the best mexican food I've had in awhile - we were able to eat outdoors on the terrace area, it was gorgeous.  The menu didn't really have too many vegetarian options, so they improvised for us for the entrees and I had really good vegetable enchilladas.  Dessert was as healthy as it was going to get, and I never realized how much I actually like sorbet.

After my run, I made my healthy version of french toast and had a big bowl of strawberries with it.  I'm going to be doing some cooking today and make some baked japanese eggplant chips and a lentil salad with some vegetables, feta cheese, and herbs.  Happy Sunday!

Thank you!  The shins are actually doing pretty good - just some minor pain.  I'm stretching a little differently which is helping :)
