A Simple Bowl of Porridge

Last night, en route to deli to buy watermelon pre-Daily Show, I text a friend to see if he wants anything. Chocolate Chip Cookie Dough Ice Cream, he texts disregarding the e coli threat, and I make mad dash through the aisles looking for it. Passing the freezer section, however, a curious-looking box of hot cereal labeled Ancient Harvest Quinoa Flakes stops me in my tracks. I’ve had a love affair with quinoa for a while now. It’s delicious, packed with protein, and gluten-free. I put it in salads, soups, and cook it as a side dish when I make fish and chicken. What’s not to love? Quinoa breakfast cereal, however? Now, that’s a horse of a different color....

I snatch it up and rush home just in time for Jon Stewart. This morning, I bounded out of bed with a mission: 1 cup boiling water on the stove. 1/3 cup quinoa in a bowl. I mixed them together with a dash of salt, coconut milk, maple syrup, pumpkin and flax seeds. The result was a delicious porridge that I recommend to you highly. Sure, it’s a teeny bit of a production, but so much better in the end than a bleh old bowl of corn flakes or boring toast.

Mmm I love Quinoa! I used to eat it all the time when I had to follow a strict gluten-free diet. And I would eat these quinoa flakes every morning.

It's supposed to be one of the most complete proteins out there.
