Circulate healthy alternatives. Like vegan cake. Don't tell anyone. This feat popped out of the devious mind of SandyLiz, but apparently others have been doing it for a long time.... Bonus points if party-goers leave only crumbs and ask for the recipe.

Well, I made butternut squash (and didn't put in any butter or cream). I loved it but everyone else went for the good stuff. Oh well... leftovers anyone? LOL

savory pumpkin pie:
1 small pumpkin (about 800g) cubed
1t chili flakes
1T cumin seeds
handfull of chopped walnuts
1/2cup crumbled goat cheese
2T chopped fresh sage
2T chopped fresh parsley
3T olive oil
3 sheets phyllo dough
salt & pepper
peel the pumpkin and cut it into cubes. toss with 2T olive oil, chili flakes and cumin seeds and roast at 425 until golden brown. toss roasted pumpkin with chopped walnuts, goat cheese, sage, parsley and season with salt and pepper. put filling into a pie plate and top with 3 sheets of phyllo brushing the phyllo with olive oil in between each sheet. bake the whole pie at 400 for about 20 minutes or until the phyllo gets crispy. DELISH!

I was preparing dinner for my boss so instead of fried food, a greasy burger, or some other nasty gutbomb, I pan seared a blackened chicken breast (with all fat trimmed) in olive oil with garlic, and served it on a whole wheat hogie roll with lettuce, tomato, red onion, and low-fat vegan pepperjack.
He had no idea and LOVED it. I did too if I can say so...

Done it twice already and the first week of December's not over. A lovely pear & low-fat ricotta parfait for Thanksgiving to counteract that evil pumpkin pie and a vegan spelt cake for my friend's birthday today.

The downfall was that I told my boss and my coworkers what was in it BEFORE they tried it. They all had gas faces while taking the first bite, of course. But it was good!

my pb and choco obsession continues. i made wheat and dairy free brownies with a pb icing! soo rich and fudgy..mmm yum. No one knew the difference thanks to Pamela's baking products. Next time I want to make the batter without oil...even healthier. :)

Brought whole wheat and bran-laced shortbread cookies to the office potluck yesterday. I don't think they were the biggest hit of the night, but people ate them and nobody made that "ew, healthy" face.
More importantly (I think) I freaking LOVE them. Quite possibly my new favorite recipe - they're like Hob Nobs on crack. I've successfully unspiked myself!

Pumpkin spice cake--disappears too fast.and so easy. 2 ingredients.
1 spice cake mix (dry), 15 oz can pumpkin. Mix well, scrap into 9 x13 greased cake pan bake in 350 degree oven for 30-45 minutes (check to see if done in middle at the 30 minutes).
