Matthew Kenney Doesn't Subscribe to Fake Meat and Wholeheartedly Trusts Skinny Chefs

Our week of chefs continues. The late hours, the endless rich food... Is there such a thing as a healthy chef? We investigate. Today, Matthew Kenney, of Pure Food and Wine, FreeFoods NYC, and numerous other restaurants gives us his take on the "never trust a skinny chef" maxim. 

  • Having cooked for so many people, what lessons have you learned about healthy eating? I’ve been a pretty healthy eater for most of my adult life. It’s about moderation. I don’t believe in hard core diets. I just believe in listening to your body. Chewing your food. A good balance of ingredients. The only thing that's really changed over time is that with each year, I’m more and more vegetarian. People say never trust a skinny chef. To me, it’s the opposite. I don’t trust a really unhealthy chef. I feel like if they don’t understand their own body, they don’t know how to nourish me. Food should taste great, but it shouldn’t make us sick.

Our week of chefs continues. The late hours, the endless rich food... Is there such a thing as a healthy chef? We investigate. Today, Josh Sharkey of Bark Hot Dogs gives us the low down on not being a vegan and eating chocolate every day. 

  • Do you know any healthy chefs? I have sort of a skewed answer because I started a cleanse about a month ago that's turned into more of a lifestyle. I cut out gluten, sugar, dairy, caffeine, and alcohol. I felt so amazing after that that it’s kind of changed my whole perception. I’ll still eat those foods on a special occasional, but on a day to day basis I won’t just have a sandwich. I feel so much better, but the other chefs think I’m crazy.

Chefs are like athletes — they abuse their bodies in the name of performance. There are the burns and the cuts, of course. But then also the late hours, the constant high stress, the endless rich food, drinking, smoking, drugs, and broken relationships. It's arguably the most unhealthy profession since coal mining. In what ways are you committed to your health? There is a bit of French popular wisdom that says, "Tant qu'on a la santé..." implying that, as long as you are healthy, nothing else is worth worrying about. And I do think the most important asset in life is health, so I strive to maintain mine as well as I can -- eating well, not drinking too much, exercising, getting enough sleep, staying out of the sun... But I also believe in balance and living life to the fullest, so I don't obsess over it. Mostly, though, I just feel better if I do all those things, so I don't find it too hard to reconcile short-term and long-term benefits.

Chef David Shea On Vermont Pork Belly and Not Working Out

It's nearly Thanksgiving, and, with food on the mind, we're talking to chefs....

Chef Who? David Shea, Executive Chef of Applewood.

Healthiest Dish: "Toasted quinoa-lentil salad with arugula, root vegetables, sherry vinaigrette."

Most Unhealthy Dish: "Crispy braised Vermont pork belly. Pretty much just pig and fat. The best of everything."  

Chef's Fitness Regimen: "I plead the Fifth. There's nothing. There just isn't. We're strong advocates of butter and bacon. We're eaters, not worker-outers. We have two kids and a restaurant, and we're old. There I said it."

Chef Nane Kimijan Rocks the Bosu Ball

In the following video you will see an extremely strong man doing remarkable and sort of fun-looking things with Bosu balls and other basic gym gear. If you watch the whole thing, and I'll confess it gets sort of repetitive, I think you will also detect a sense of humor in his routines. This is Nane Kimijan, who was born in Slovakia, and realized at 14 he had two passions: fitness and cooking. Nane can knock off 42 pull-ups in two minutes and run 100 meters in 11 seconds, but you should seem him chop garlic! Apparently, Nane apprenticed for seven years as a chef in Venice, Italy, before coming to America to cook at the Teatro Goldoni, one of Washington D.C.'s top restaurants. The world is a strange and wonderful place....
