Beets and Tomatoes with Cumin

Pulled a recipe off allrecipes.com earlier today and modded it for my own paleo purposes! Made a few substitutions and wallah! Instant primal vegetable-y goodness.
Sautéed some onions and garlic in coconut oil, tossed in a bit o' cumin and chickpea flour (ground garbanzos, much healthier than that all-purpose dross), then added water, salt, sliced tomatoes and beets. Left that on low heat for about half an hour. Scoop and serve.
Then had dried mango slices for dessert. Sweet.

Cumin is quite possibly my favorite spice. Maybe after salt. Either way, I feel it is grossly under-appreciated. If I ever motivate to eat my vegetables any manner other than raw, I'll see if I can't replicate.
