food feat foiled already!

Alright then!!! I had a Love challenge FAIL. Next up!! FERAL!! let's get this started!!
Starting with my lunch:
red kale with turmeric, garam masala and expeller pressed safflower oil (um, all my foods will be cooked in this if in pan, i hope that's unprocessed enough??)
tofu (oh NOOO. plan FOILED already!!!! guess i'm not starting?? what am i supposed to do. Tofu is in a package. I guess i can buy the unpackaged stuff from a chinese market? can someone let me know please? i can't eat meat or dairy...i don't have many protein choices. I can just eat the kale and rice? :( but i'm hungrrryyyyyyy!) with ginger, scallions, rice wine vinegar, safflower oil, s&p.

I'm struggling with this as a vegan too Urbie! Either need to find 12 raw food recipes (and I am not great with uncooked foods, to be honest) or admit defeat already. Hohum.

it doesn't have to be raw! just focus some meals around veggies, grains and legumes, fruits and nuts and you're good to go!

nuts will work! edamame too! :) not a fan of waiting foreverrr to soak beans. lentils are quick though... and at least i can have nuts!

I'm taking this to mean that minimal processing is okay, with minimal weird ingredients. I mean, if you read the package and don't know what something is, probably not okay. But tofu is tofu and I'll be using that too :)

i don't think tofu is minimally processed -- think about what has to be done to get soymilk from a been and then add coagulating agents, preservatives etc.
anyways, if the challenge says nothing that was in a factory before it got to you...then i think that's pretty clear.

Can you make your own seitan?
What about making your own nut butters (mmmm, yummy and SO easy if you have a halfway decent food processor)?
Homemade hummus?
Here's a great raw food recipe:
"Shave" a couple of raw zucchini with a veggie peeler --- just peel it in strips to create "noodles".
In a food processor, combine 1/2 an onion, a couple of cloves of garlic, a few mushrooms, handful of spinach, and whatever other veggies you have lying around. You can put in a handful of almonds, too, for protein. Little salt and pepper, some oregano and thyme. Process that until it's in small chunks. Then add one small tomato and process again. Keep it all on the chunky side.
Pour your tomato sauce over your zuke strips and presto! A raw, vegan version of puttanesca. :)

i will NOT be making my own seitan. Just not happening. nut butters, i'll think about it.
I WILL be making Kitcheri, yum! (mung bean and rice porridge sorta thing. it's very mild and cleansing). will post recipes.
